Those following a Paleo diet get most of their fat from coconut milk. Coconut milk is great for making smoothies. Canned coconut milk may contain BPA, a chemical which can leach out of the metal and into acidic foods, such as coconut milk. To reduce exposure to BPA, try to avoid metal containers and use only glass.
Another potential danger with canned coconut milk is guar gum, which comes from the bean family. Beans can be hard to digest, especially for people with digestive problems. Guar gum causes no serious harm.
Those who cannot process fructose can grow bacteria in the small intestine, also decreasing the rate of water absorption. Up to 40% of Americans suffer from fructose malabsorption. Those with Irritable Bowel Syndrome are especially prone to it. Avoiding fruits, wheat, milk, sugar substitutes, and legumes will improve their symptoms.
To get coconut milk without the BPA and guar gum, you can make your own at home. Add shredded coconut to very hot water. Blend it and strain. This fresh coconut milk should be used within 3-4 days.
